Ingredients1 1/2 lbs of cubed pork (I used cubed pork tenderloin seared/saute in skillet with vegetables)
2 lrg Cans of hominy
1 can chicken broth
1 can spicy diced tomatoes (I used Del Monte)
1 can sweet yellow corn or frozen corn
1 or 2 green chiles roasted and peeled)
1 lrg sweet Onion, diced
3 or 4 large carrots, diced
1 or 2 stalks of celery, diced
salt and pepper to taste
1/2 tsp Each chipolte chile pepper, cumin, garlic (For less spicy only use 1/4 chipolte chile pepper)
1 tbs chili powder
1 bay leaf
DirectionsBrown pork in the stock pot.
Saute the onions and celery with the pork until the onion is transparent.
Add all ingredients to crock pot cook on low for about 10 hours or high for about 6 hours until pork is tender. Serve with rice, avocados, tortillas and/or chips
